Homemade Popcorn

//Popcorn is a staple in our household. At least once a week you will find me winding down the evening with a bowl in front of me.  It’s amazing on all accounts. It is a healthy snacking option, and for me, it is full of nostalgia--warm, fuzzy feelings from the past that permeate the present. Moments of sitting with family and friends, snuggled on the couch, with a good movie or fire entertaining the night.  

Homemade Popcorn

Serves 4

3 tablespoons of coconut oil

1 cup of uncooked popcorn

Sea salt to taste

Place pot or Whirly Pop on stovetop on medium high. Add in 1 tablespoon of coconut oil. Allow oil to fully melt.  Place a few kernels of popcorn in the oil with the lid open or off.  Once you hear these kernels pop, add in rest of popcorn and shut the lid.  

If you are using the Whirly Pop, be sure to crank the handle every now and again to reduce burning.  If you are using a good ol’ fashioned pot, shake it up to do the same thing.  When you hear the popping slowing, dump popcorn into a large bowl.

Melt additional 2 tablespoons of coconut oil in a small saucepan.  Drizzle over popcorn and sprinkle with a bit of sea salt.  Toss with hands to coat. Enjoy!

//Cook’s Note:  You can use any variety of kernel that you like, but I prefer yellow.  It tends to pop larger and fluffier.
